Seven Fires: Grilling the Argentine Way
By Francis Mallmann, Peter Kaminsky
Categories: Cookbooks, Food & Wine
Argentine chef Francis Mallmann's 2009 cookbook, written with Peter Kaminsky, celebrates the open-fire cooking of Patagonia and the gaucho tradition. It is organized around seven fires: the parrilla grill, the chapa griddle, the infiernillo, or "little hell," the clay oven, the rescoldo method of cooking in embers, the iron-cross asador and the caldero, or cauldron. Recipes for beef, lamb, fish, vegetables and desserts sit alongside Mallmann's stories of cooking outdoors.
