Brian Polcyn

Brian Polcyn is a chef from Michigan who ran restaurants including Five Lakes Grill and Forest Grill and taught butchery and charcuterie at Schoolcraft College from 1997 to 2024. He co-wrote Charcuterie (2005) and Salumi (2012) with Michael Ruhlman.
