Sesame: Global Recipes and Stories of an Ancient Seed
Categories: Cookbooks, Food & Wine
Rachel Simons, who helped start the New York sesame shop Seed + Mill, celebrates the history and versatility of sesame in more than 80 vegetarian-forward recipes. She covers seeds, tahini, sesame oil and halva, along with blends such as gomasio, furikake and togarashi. Dishes include sweet and salty sesame challah, lemony orecchiette with sesame pangrattato and a tahini-swirled pavlova. Chefs and food writers including David Lebovitz, Molly Yeh and Zoë François contribute to the stories of how different cultures use the seed.
